Pineapple Mezcal Smash

A sample bottle of Mezcal got us to mixing up some Pineapple Mezcal Smashes this week.  The smoky nature of Mezcal marries beautifully to the bright mouth-watering flavors in fresh pineapple.  Add to that a bit of aromatic mint for a cocktail flavor combination that is nothing short of amazing.  

Pineapple Mezcal Smash

In an oversized Old Fashioned glass add:

• 2-1 inch square chunks of fresh pineapple (rind off)
• 4 mint leaves
• ½ Ounce Simple Syrup

Muddle gently to break down the pineapple.  Add crushed ice then add:

• 2 Ounces Joven Mezcal
• 1 Ounce Pineapple Juice (we love Knudsen!)

Stir to chill and combine ingredients.  Garnish with a generous bouquet of mint and wedge of pineapple.
